BAKED CHICKEN FINGERS

Put on a few pounds in all the Eid feasting and in the wedding season? Well then it’s time for some conscientious eating and may be a few weeks of walking in the park. Here is an excellent, mouth-watering and filling recipe to start off the cycle of low-calorie home cooked food. Believe me there’s no other way.

 

Servings 4

Chicken breast 4

Salt 1 tsp

Black pepper powder 1 tsp

Garlic paste 1 tsp

Vinegar 1 tsp

Milk as required

Cornflakes crushed 2 cups

Coriander leaves chopped 2 tbsp

Method

  1.  Cut chicken breast into fingers and marinate with salt, pepper, garlic and vinegar for 30 minutes.
  2. Dip in milk and roll in the cornflakes until they are well coated.
  3. Grease a baking tray and place the fingers in the tray. Bake them for 25 minutes on 200C or until done.
  4. Add some green beans, mustard (has almost zero calories) and either some low fat yogurt or a slice of brown bread. Indulge!

MANGO COLADA – SUNSHINE YELLOW SWEET COCKTAIL

Although it’s too early to say ’tis the season to be jolly” but I gathered that we all need a ray of sunshine in our lives. Plus the mango season is about to end people, so make use of the last few varieties which are left. Opt for the smaller sizes (they are all sweet this time of year). The larger ones have been around for a while and tend to be a bit glutenous from inside. Raise your glasses to a brighter future for our children, and HOPE! Lots of hope and prayers required. Ameen!

Mango juice 1 cup

Coconut milk powder 2 tbsp

Cream 2 tbsp

Vanilla ice cream 2 scoops

Crushed ice 1 cup

Method

  1. This is the perfect mango recipe for a hot, sunny day. Blend 1 cup of mango juice, 2 tbsp coconut milk powder, 2 tbsp cream, 2 scoops of vanilla ice cream and 1 cup of crushed ice.
  2. Blend until smooth. Add more ice if it is too thin and liquidy.
  3. Add some chopped mango and canned cherries to serve. Better yet make a smiley face out of them :) .
  4. Your mango cocktail is ready. Mango drink away!

Choco Lava & Pineapple Drink – ThandAAAAA!

Choco Lava and Pineapple Drink

 

One juicy burger with all the trimmings. YUM! But this picture aint complete without this extra ordinary, chocolate laden, pineapple candied drink. Imagine taking a sip of this chilled thick creamy drink filling your senses with chocolate and drenching you in the sweetness of pineapple chunks all at once.

Gotta go make this now everyone. I can’t wait!

Condensed milk chilled 1 can

Lemon juice ¼ cup

Fresh cream whipped 2 packets

Biscuits broken into tiny bits 200 gm

Pineapple pieces 1 cup

Chocolate chips 4 tbsp

Chocolate sauce – to drizzle

Method

  1. Beat 1 can of condensed milk and ¼ cup lemon juice together until the mixture is creamy. Blend in chilled milk and ice cubes to make the mix match the consistency of a milkshake.
  2. Mix in 1 cup pineapple, 2 packets chilled cream and 200 gm of broken biscuits manually.
  3. Drizzle the bottom of some tall glasses with the chocolate sauce generously. Spread this mixture in these individual glasses with wide mouths and top with pineapple cubes. Dress the drink with chocolate chips and a generous drizzling of chocolate sauce. Serve chilled.

CHEESY PITTA WEDGES

Cheesy Pita Wedges

Cheese lover? Look no further! This absolutely new, absolutely amazing snack cum meal will become your favorite “relax on Friday night in front of the TV” piece. My advice to you is to make much more than you think you will eat. For one you won’t be able to stop yourself and two the delicious aroma of melted cheese, smoked chicken, sauce and dressings will force your room mates, neighbours and what have you to join in as well.

Pita bread 2

Cream cheese 4 tbsp

Garlic paste ½ tsp

Chicken roasted or grilled in tikka masala and shredded 1 cup

Salt ¼ tsp

Black pepper ¼ tsp

Oregano ½ tsp

Chili garlic sauce as required

Sweet corn 4 tbsp

Mushroom sliced 4 tbsp

Cheddar cheese grated ¾ cup

Method

  1. Mix together 4 tbsp cream cheese, ½ tsp garlic paste, ¼ tsp salt, ¼ tsp pepper and ½ tsp oregano.
  2. Spread cheese mixture over the 2 pita breads lavishly.
  3. Add the shredded chicken, 4 tbsp sweet corn, 4 tbsp sliced mushrooms, ¾ cup grated cheddar cheese and a dash of chili garlic sauce inside the pita pocket.
  4. Bake these in a pre heated oven on 180C for 12 to 15
    minutes till the bread is crisp and the cheese inside has melted. Cut into wedges and serve hot.

SHIKANJABEEN – Lemon Coolie with a touch of Mint

Ahhh! What’s better than a tall glass of chilled lemon coolie. I am sure you can hear the ice cubes tinkling inside the glass right now and can feel the droplets of water sweating off the outside of the glass as you lift it to your lips to take that first, much deserving, totally refreshing sip. Ahhhh! REFRESHING, cooling, already forgetting that bad meeting and dirty looks from the boss ;) .

Lemon juice ½ cups or squeezed from 8 medium lemons

Sugar 6 tbsp

Water 3 cups

Salt a pinch

Fresh mint leaves – ½ cup

Ice 2 cups

 

Method

  1. Put all the ingredients in the blender and blend. Serves 4!
  2. Skip the sugar or replace with nutrasweet if you wish :) .
 

COCONUT BALLS – YUMMY!

Dessert, the sweetness at the end of a long, hard day. When it comes to sweets, Jalebi is a hot favorite in South Asia. You can find the recipe for Jalebi in my book of Dessert recipes.
In Egypt people prefer a warm bowl of Um-Ali, a bread and milk pudding. In Iran the Baklava reigns supreme.

Today I am going to share with you an authentic, contemporary yet quick recipe which you can prepare easily. I can also go as far as to say that you probably have never seen this recipe anywhere else. So fasten your seatbelts.

Coconut Balls

Servings 8
Preparation Time 15 min.
Cooking Time 10 min.

 

Castor sugar 1/2 cup

Milk 1/4 cup

Egg white 1 beaten

Dark or milk cooking chocolate 100 gms

Desiccated coconut 2 cups

Icing sugar 2 tbsp

Vanilla essence 1/2 tsp

Method

  1. Add milk and castor sugar in a pan. Heat till the sugar dissolves. Empty into a bowl and allow it to cool.
  2. Melt the chocolate in a double boiler and set aside.
  3. As soon as the milk/sugar mixture has cooled, add in coconut, the egg white, icing sugar and the vanilla.
  4. Mix these well and put the mix in the fridge to chill.
  5. When it is cool, roll the mix into balls and dip each ball into the chocolate. You can take the help of two forks to accomplish this.
  6. Place the coated balls on a tray lined with greaseproof paper. Sprinkle each ball with coconut and put it into the fridge to set.

PURPLE FALSA SOIREE – Refreshing Blueberry Sherbet

Chats, pakoras, samosas later, when you get a bit thirsty, opt for this taste drenched drink. This amazingly refreshing sherbet will send you in another world. Top this over crushed ice and you won’t be able to put your glass down. Gauranteed!

Blueberries or falsa 1 kg

Water 4 cups

Sugar 2 cups

Black salt 1 tsp

Method

  1. Make 2 cups sugar syrup with 2 cups of sugar and 2 cups of water until the mixture turns thick.
  2. Remove from heat and keep aside.
  3. Soak the fruit in 4 cups of water for 4 hours.
  4. Now blend the fruit with the water 2 or 3 times and then pass it through a fine sieve. Discard the seeds and mix the juice and sugar syrup together.
  5. Serve chilled with ice cubes and a little black salt sprinkled on top.

CHICKEN FINGERS – Yummy!

Chicken fingers are a common favorite as an appetiser at many restaurants. These chicken fingers will make you forget the ones you have had at Shoasters ;), Paindoos ;) and Amazona Grill;).

So on the possibly last roza of this Ramadhan do try these at home. The recipe is extremely quick and easy to follow. You can also include this on the menu when you have family and friends over for Eid.

Servings 6

Cooking Time 15 min.

 

Chicken breast 2 cut into fingers

Black pepper powder ½ tsp

Mustard powder ½ tsp

Salt ½ tsp

Bread crumbs as required

Flour 1 cup

Eggs well beaten 2

Corn flour 2 tbsp

Self raising flour 4 tbsp

Milk ½ cup

Oil 2 tbsp

Salt ½ tsp

Chinese salt ½ tsp

Black pepper powder ½ tsp

 

Method

  1. Marinate the chicken fingers with ½ tsp salt, ½ tsp black pepper and ½ tsp mustard powder.
  2. Mix flour, beaten eggs, corn flour, self raising flour, milk, oil, salt, Chinese salt and black pepper powder to make a smooth batter.
  3. Dip the fingers in the prepared batter. Roll them in bread crumbs and deep fry.

 

 

 

CHICKEN CHEESE BALLS ALA RAMADHAN – Fried Cheese Balls

A mouth watering combination of chicken and cheese mixed with a heady combination of spices. Delectable!

Chicken is possibly the most favorite ingredient of everyone in Pakistan. Surprisingly the most popular Iftar recipes include more of vegetarian elements. But this new twist to cheese balls will whet your appetite. Specially for the chicken lovers and ofcourse the cheese lovers. This hearty combination of chicken and cheese will just melt into your mouth.

Servings 6
Preparation Time 20 min.
Cooking Time 15 min.

Boneless chicken breast 2

Piece of bread 1 small

Eggs beaten 2-3

Water 1 cup

Cheddar cheese ½ cup

Full cream or half and half ½ packet

Bread crumbs as required

Ginger garlic paste 1 tsp

Soya sauce 1 tbsp

Spring onion greens only ½ cup

Coriander
leaves chopped ¼ cup

Black pepper powder ½ tsp

Mustard powder ½ tsp

Salt ½ tsp

Mayonnaise 4 tbsp

Method

  1. Boil the 2 chicken breasts with 1 cup water, 1 tsp ginger garlic paste, ½ tsp salt, ½ tsp pepper, ½ tsp mustard and 1 tbsp soya sauce. Use just enough water so that it gets absorbed back into the chicken – more like steaming.
  2. Cool and shred the chicken bits finely. Then mix the shredded chicken with 4 tbsp mayonnaise, ½ packet cream, ½ cup cheddar cheese, coriander leaves and spring onion leaves.
  3. Wet slices of small bread in little water and wring them by squeezing between your palms lightly. Lay down flat and fill with the prepared stuffing. Roll the bread into a thick round shape dip in the beaten eggs, coat in bread crumbs and fry till the color turns to golden brown. This won’t take long!
